What mint authority actually controls
Every SPL mint stores an optional mint authority address. That address can mint new tokens into any account, without limit. Setting it to none is irreversible: the supply can never increase again.

When to revoke
Revoke after you have confirmed the metadata renders correctly and after any supply you intend to mint has been minted — but before you invite anyone to buy. Revoking first and discovering a typo in the logo afterwards is the common expensive mistake.
